I asked for this book after seeing it on Amazon and was sorely disappointed when I got it.As we say in Texas, all hat, no cattle.I am allergic to casein and can't eat half the stuff in it.It looks great, but the title is *totally* misleading.I've gotten more mileage out of Beth Kidder's "Milk-Free Kitchen" and a nutritionist's "Lactose-Free Cooking."If it were truthfully titled, I probably would have been more favorably impressed.

I am allergic to milk and am always on the lookout for new cookbooks. I spent some time looking through this one in a kitchen store recently and decided not to buy, mainly because of the use of non-dairy cheese in many recipes. Yes, these cheeses are good for the lactose-intolerant, but they are not good for anyone allergic to milk. All of the good ones contain casein, a protein in milk that is often the cause of allergic reaction. There are truly milk-free cheeses out there, but they do not tend to melt well, and, therefore, often can't be used successfully in cooking.5-0 out of 5 stars This is an Awesome Cookbook!

I bought this book hoping that I could adjust some of the recipes to use splenda or stevia to substitute for some of the sugar in the recipes, since otherwise, the recipes usually are low enough in total carbohydrate grams to be do-able on even the more restrtictive low-carbohydrate diets.The best luck in terms of lowering the sugar content while still keeping a good flavor and texture involved switching out half the sugar for splenda, and not using stevia at all except in the darkest chocolate of the recipes, where the herbal note of stevia doesn't compete with the other flavors.The sugar is still there, but there's less, and a low-carber can feel like they're not being _completely_ bad, as well as not _completely_ deprived of desserts.1-0 out of 5 stars Yet Another Reservation
For those who are truly wheat and dairy intolerant, this book is rather a taunt than a solution.It is of little solace for anyone who is allergic to eggs, and many people who are allergic to wheat are also likely to be allergic to nuts.It is a parade of all the delicious things one cannot have.

I am allergic to wheat and choose a vegan diet. I purchased this book due to the summary and fabulous reviews only to find that the title of this book is completely innaccurate. It is NOT dairy free, but instead it is lactose free. Most of the recipies call for at least 4 eggs and often they're separated, which makes it difficult to use egg replacer. The use of nuts is an excellent alternative to flour and I feel that this book is suited to persons with a wheat allergy. I neglected to mention in my previous review that this book features many wheat-free variations of the desserts, plus other types of variations that seem to go on and on...you will not be bored with this cookbook. Almost every recipe can be made wheat-free, and almost every recipe has 5 or 6 variations that could easily qualify as independent recipes in their own right--making the grand total of recipes *many* more than 120.

Meredith McCarty has put together a most marvelous book for health-conscious people who want tasty desserts.In addition to over 120 recipes, there is a wealth of information about baking, health, ingredients, techniques, history of foods, etc. This is a great resource.All recipes are vegan (meat- egg- and dairy-free).The book is divided into 8 different dessert sections, plus pages and pages about different sweeteners, flours, leavening agents, oils, salt, fruit, seasonings, edible flowers, appliances, cookware, supplies, etc...The dessert sections are: Fresh Fruit Desserts; Sorbets; Pies & Tarts; Crisps & Cobblers; Cakes, Tea Breads, & Muffins; Cookies; Puddings; Nut Milks, Pastes, & Creams. Ms. McCarty is obviously fond of using brown rice malt syrup or other malted grains as a sweetener, as they metabolize more slowly.But she also incorporates FruitSource, pure maple syrup, fruit juice concentrates, etc. This book is not just for those who want to use more natural sweeteners or who have problems with sugar, nor is this book just for those who want dairy-free desserts.It's for anyone who loves to bake/cook and loves to eat! All the recipes I have tried thus far have been delectable. I just made the Cranberry Nut Bread and it is fantastic! The book does feature a few color photos of some of the finished desserts. All in all a fabulous addition to any cook's kitchen, but especially those who are health-conscious and/or vegan.

This book is great. I am at a point in life where I am facing some health questions due to my diet, and Ms. Allen's "Eating Clean" has helped me answer them. I didn't realize until recently that wheat (or gluten) is a problem for a lot of people. These recipes allow me to address the problems caused by both wheat and dairy, which are so common in so many foods.

I am a vegetarian so I read this book with some apprehension. But I found a number of recipes that I could prepare and eat just as they were written! And many others are easily transformed into vegetarian meals by substituting tofu for the recommended meat, or just leaving protein out of the recipe. I can't wait for cooler weather so I can try some of the yummy soups!

Our 4 year old son has multiple food allergies.We started cooking dairy, egg and peanut free 10 months ago and we recently had to add wheat and gluten to the list of banned foods.This is the only cookbook that I could find that provided recipes that are wheat, gluten, egg and dairy free.Don't worry, if you can eggs and/or dairy this is still the cookbook for you.The recipes are given with and without eggs and dairy.I have used the dessert section extensively and some of the breads and breakfast recipes.5-0 out of 5 stars This book is wonderful!
Since I have checked this book out from our local library about five times, I guess it's time I bought one!I just baked the scones and I could not believe they did not use wheat flour, and I was the one who baked them!This book is wonderful and I honestly don't think I could stay gluten-free without it!

This book was a tremendous help to me when I had to cook for weekend guests - since I was gluten intolerant and didn't want to make two different meals, this book contains recipes on how to make "normal" meals that everybody can enjoy, yet be gluten-free.What is especially helpful is the menu plans for special occasions - no more pulling my hair out trying to figure out what to serve.And when my birthday came up, I was thrilled to see all the different cake recipes I can use.The cake and muffin recipes I tried were light, fluffy and scrumptuous.My guests had no idea they were gluten-free.And there are even several cake shapes and decorating ideas that would be especially fun for children.I highly recommend this book for anyone that is gluten-intolerant or has food sensitivities. ...
