If you are new to Veganism, you are probably missing the familiar flavors of cheese. Although you cannot copy the flavor exactly, the book has many tasty recipes so that you can keep enjoying your old favorites while making a difference for your health and the rest of the planet.

The hardest part of becoming vegan for me was giving up cheese. This book literally saved my life (and the lives of countless animals!). The recipes are interesting and inventive, and while they don't taste, look, or behave exactly like cheese, they still have an uncanny resemblance and flavor that truly satisfies. Some of my favorites: Crock Cheez, Gee Whiz Spread, Port Wine Uncheese, Broccoli Pesto Pasta, Cheez Please Soup, Zucchini Chedda Soup, Philly Potato Chowder, Besto Pesto, Tofu Pate, Stuffed Shells, Chickpea Flour Pizza, French Bread Pizza, Cheez-A-Roni, and Tetrazzini. And I don't know what I would do without simple, convenient, inexpensive, and healthful staples like Parmezano Sprinkles (a Parmesan cheese alternative), which I use on almost everything, and Instant Cheez-It (a dry mix for cheesy sauces on-the-fly). People who don't like this book clearly haven't explored it fully. As with any cookbook, there are some recipes I like more than others, but there is so much to love here that you are sure to find your "cheese tooth" satisfied!

This cookbook is pure magic!Who would have thought you could combine a few simple ingredients and end up with the most sumptuous sauces, delicious dips, and enticing entrees without using one ounce of dairy?Not to mention the block cheezes which work so well in a sandwich or sliced onto crackers.What amazing alchemy is at work here?I came across Ms. Stepaniak's first uncheese cookbook (The Uncheese Cookbook) several years ago when my then teenage daughter decided to become vegan.I really needed some ideas for food that was familiar, yet vegan, and also delicious, and hopefully healthy."The Uncheese Cookbook" satisfied all these requirements, and then some.I was simply amazed at the delicious recipes and the overwhelmingly positive responses from my family.Needless to say, this book soon became a much loved and much used treasure.I actually ordered a spare copy as I was worried I would wear out the first!

I, too own the Betty Crocker Cookbook, and I, too, am capable of a simple search & replace string for phrases. It seems to me that the author simply took recipies from established cookbooks, and replaced every instance of the word "butter" with "milk-free margerine", the word "milk" with "milk-free milk substitute", and "cream" with the words "non-dairy richwhip".With a remarkable lack of knowledge about the difference between lactose intolerance and actual non-dairy living, she approaches the reader with what were probably good intentions, but merely comes off as misinformed. This book is fine if you are lactose intolerant. However, if you are truly trying to live diary-free, give it a miss. Also, if you're frugal, just take a pencil to your battered copy of Betty Crocker, and sub out the ingredients yourself. Maybe a publisher will buy your work, too.

I work full time, I have 2 kids, I don't have time to make all sorts of substitutes and marinate stuff for hours.This is simple, easy to follow book with results that are really tastey.INCLUDING DESSERTS!!! The whole family ate these reciepes no questions asked!They didn't even know that they were eating dairy free until I told them a week later.I have yet to have one reciepe flop!!

My son is allergic to both dairy and soy. about 1/5th of all those with milk allergies are also allergic to soy. This book provides many recipes that do not rely heavily on milk substitutes and thus are a Godsend to thus of us who can't just add soy to make it work.

I love this cookbook. It has great information on all types of sweeteners and goes through many different types of oils and flours too. The main ingredients she uses in this book for sweeteners are brown rice syrup, barley malt syrup and some have maple syrup. It is pretty easy to find the ingredients and the directions are easy to follow although I am a fairly experienced baker so I do "add lib" when I cook and find that the end result has been great. I made the lemon cake with the sauce but minus the lemon tofu cream because I have a slight allergy to soy. Tofu is definately a required taste and she uses very little in this book and it can easily be omitted.

i bought this book with high hopes as we are making the switch to whole foods cooking/baking but do enjoy our desserts.unfortunately, i will have to keep looking - this is not it.the author seems more interested in presentation than taste.i spent $7 for tofu for the lemon cake and we didn't care for it at all - we threw it away.i followed the recipe to the letter and thought there were too many steps not to mention the taste was bland and the cake didn't keep well.i just made the cranberry bread again following the recipe to the letter and was very disappointed in the results.it didn't raise over 1 1/2 inches with 2 tsp. of the aluminum free baking powder plus baking soda!!i realize whole foods cooking/baking is different and the results may be somewhat different but i was not prepared for that much difference.

We made the Chocolate Chip Cookies from p. 221, which are vegan. They had a funny taste from the brown rice syrup (sort of sour after) and the use of water. They didn't have enough fat, or flavor for me. There are no eggs or milk or butter in this recipe, just oil, and the chocolate chips are malt sweetened. I applaud her efforts, and will try some others in this book. Desserts that are fairly healthy are a worthy pursuit. And many sound delicious. ... Read more

This book contains a collection of interesting nutritious drinks made with various nuts and seeds.In the introduction, Cole points out some of the nutritional benefits of drinking beverages made from nuts.She includes comparisons of non-sugar sweeteners (such as barley malts, honey, or stevia leaf), and ingredients that can be added to fortify the milks (such as flax seeds or lecithin).The instructions for preparing the milks are explained on one page, and they are the same for all the recipes in the book.Thus, if you get the procedure down, you'll be ready to try anything.Equipment needed for making the milks includes a nut grinder (coffee bean grinder), a blender, a pot and a fine mesh strainer.The recipes in the book are organized by the type of nut or seed in the base, and include chapters for almonds, cashews, pecans, pine nuts, walnuts, pumpkin seeds, sesame seeds (mainly tahini), and sunflower seeds.The recipes frequently call for fruits, especially apples or bananas.Some also call for flavor extracts, such as vanilla or almond.Included with the recipes are notes about the special nutritional content of the ingredients.

This is an excellent book not only for children with allergies, but for everyone looking for healthy alternatives...Almonds are hypoallergenic naturally and almond milk is perfectly safe - better yet when organic almonds are used. Peanuts (a bean, really, and not a nut at all) are one of the highest allergens in young children. Peanuts are also not the best choice for nut milks. Almonds contain proteins, fats, carbohydrates, calcium, potassium, and magnesium - they are the BEST choice for nut milks. Other "good" nuts are cashews, pecans, pine nuts, walnuts, pumpkinseeds, sesame seeds (may be a tad strong for the wee ones) and sunflower seeds. This book has 40 wonderful recipes.I have the first edition of this book (1990) for it's been a trusted freind for over 10 years and I have tested each and every recipe myself and they truly are wonderful...I HIGHLY recommend it.The best part is that it really gets you inspired and after tasting the delicious elixir, and knowing all of the benefits, you will NEVER buy boxes soy, rice or almond milk again. Recipes For Dairy-Free living is not a great add to your home cookbook collection.I would tell most people to pass it up.While the author boasts "everything can be found in the supermarket" and over "100 innovative creations" you WON'T want to make many of these recipes.Not much in this book could be made quickly or on a tight budget.There is a large amount of ingredients and steps to most of the recipes. The sections on sauces, quick breads, and sweet endings are the best in the book, but still leave you wanting more.I found that this book isn't written for a new cook and there is no nutritional values given.I know it is very important to me to see how much calories, fat, calcium, and fiber that I'm eating.Go looking for another cookbook.It's not worth your money.And I bought mine used!!

I bought a copy of this book after reading a newspaper article on the author that also featured some of the recipes included in the book.It's a great addition to my cookbook collection.Although I don't have a problem with dairy foods, I have some friends that can't tolerate them, so I bought this book to help me create a dairy-free dinner party.It was a huge success.I found the recipes easy to prepare and my friends raved about the dishes I served.The biggest "hit"on the menu was the Coconut-Lime Seafood Stew and I had to prove that the Flourless Chocolate Almond Cake contained no dairy ingredients.I found the book to be very informative and liked the fact that I could find all the ingredients at a local grocery store.My "dairy challenged" friends all want a copy of this book, so part of my Christmas shopping is already taken care of!!Thanks Denise

Some dear friends from out of town are coming to our house for Thanksgiving dinner. Stan is allergic to shellfish and his wife Louise has dairy allergies. Stan will be fine; I'll be cooking a turkey. But how can I find a substitute for creamy mashed potatoes and pumpkin pie with whipped cream? Thanksgiving wouldn't be the same without these traditions, so I went in search of some help at my local bookstore. I was surprised and delighted to find Denise Jardine's "Recipes for dairy free living". What a wonderful niche she has filled with this book. My goal was to create a wonderful holiday meal that accommodated dietary restrictions of my guests that was invisible to everyone. Now no one will feel left out or singled out, and I am confident about preparing and serving this menu. Denise has made the preparation a no-brainer by including a step-by-step planner. I applaud Ms Schechter for writing this cookbook. The restaurant, My Most Favorite Dessert, is a hugely popular destination. MOst of the recipes are decent. I especially like the Chocolate Chocolate Chip Cookies. I made them for a friend we went to for Shabbat. Like anything else, ther are some great recipes in here and some not-so-great recipes. For a truly great cookbook, try Marcy Goldman's Jewish Holiday Baking.

I also felt the need to chime in here. I LOVE this cookbook. Everything comes out perfect and delicious (except the chocolate ganache which was quite a mess). My guests actually recognized Doris' Blackout Cake and said it tasted exactly like the one at the restaurant. The double chocolate chip cookies are incredible. The entire "pie and tart" section is wonderful. And I think the basic vanilla and chocolate cakes are perfect and delicious. This is one of my favorite dessert cookbooks and my "go to" book whenever I need an impressive dessert.

As an allergy sufferer who counsels many allergy patients, I am disturbed that this book bills itself as "all natural" yet contains so much soy.Modern soy products are anything but "natural" and soy is now among the top 8 allergens. Those who are allergic to dairy or peanuts who start eating soy foods or drinking soymilk will, in all likelihood, soon be allergic to soy as well. Finally, people who eat a lot of soy often develop digestive problems and "leaky gut" syndrome, causing further problems for allergy sufferers. And there is a little known connection between soy and celiac disease so people with wheat and gluten allergies should definitely not eat soy either.Thus I feel impelled to warn readers that soy products are poor choices for people already challenged with allergies and related problems such as eczema and asthma.Yet this book includes lots of recipes with soy. I recommend that people educate themselves as fully as possible on this subject whether they think they have soy allergies or not by reading the book "The Whole Soy Story" by Kaayla Daniel. The book has been endorsed by Dr. Doris Rapp, a leading authority on allergies who has a great website [...]."

2-0 out of 5 stars This is for vegans, not just the lactose intolerant
I bought this book so that I could learn some milk-free recipes, as I have trouble digesting dairy products. I was dismayed to find that this book is hardcore vegan...so not only is there no milk, there's no eggs or anything else from an animal. I mean, if you want to be vegan, fine, but I'm just looking for some milk and butter-free recipes. These recipes called for way too much tofu, though I'll admit the tofu cupcakes were good. But by and large, unless you are really committed to the vegan lifestyle, I'd look elsewhere.

My partner complained of a lack of options when I told him he should stop eating dairy.(He has a dairy sensitivity and was at the time avoiding cow's milk, but still eating goat dairy.)Then I found, among other things, this book at the local natural foods store, and it disproved that theory quickly.

Lots of creative ideas, relies a lot on veggies, and personally I don't think the meat recipes i've tried taste very good.If you like eating a lot of veggies this is the book for you.I use this book mainly for the ideas, and go from there.Lots of pictures, well written, well organized.

This recipe book provides a great deal of helpful information on alternative lactose free products and what to look for on the label to find lactose, as it may be hidden in some other ingredients.The recipes are delicious and simple.There is a wide variety of unique recipes to try.My husband and I are having the best time with the wonderful ice cream recipes!This recipe book is a must if you are lactose intollerant or have a lactose restricted diet. The book is well worth the low cost!

This is the silliest cookbook I have EVER read.Sheri Updike doesn't offer interesting new takes on the foods we all love; she substitutes lactose-free milk and margarine for regular milk and butter and claims to have created new recipes.She offers a "recipe" for Jiffy cornbread mix, using lactose-free milk and margarine!I could have done that when I was in middle school, but I was too busy baking dairy-free cornbread from scratch!(Which is not difficult at all--see my review for _The New Farm Vegetarian Cookbook_.)And did I mention the Updike's writing is awful?For example, "According to personal taste, as the eggs cook the whites will become opaque and the yolks will harden."Actually, I'm pretty certain that regardless of my "personal taste," the eggs will cook as above--that's basic science--which, like basic writing, Updike apparently missed.Avoid this book!

I found the off-the-shelf safe list helpful, but almost all the recipes require dairy substitutes, many of which are difficult to find in my small rural community and most of which are soy-based. My husband is lactose intolerant. I am not, but I cannot eat soy. I was hoping for recipes that would help me get along without dairy products, not simply use soy-based substitutes. I thought this was a great cookbook:not only did it go into what lactose intolerance is, but it also offered multiple suggestions about how to meet adequate calcium requirements (as well as other nutritional requirements)when one is lactose intolerant.I tried out quite a few of the receipesand found them to be wonderful; even my friends who are not lactoseintolerant loved them.

I categorize certain cookbooks as "wacky".The presenceof recipes with names like "pear ginger cake" or "roastedratatouille pizza", for example, will put a cookbook in the wacky category.This should not be confused with bad.Main does use yogurt and aged cheese in many of the recipes, so this is far from the best cookbook for those with true milk allergies.But both the allergic and the lactose intolerant will find the introductory material enjoyable and enlightening; Brenda Davis' explanation of calcium absorption is one of the most up-to-date I've seen in a cookbook.Nutritional information for each recipe is supplied.The presentation is attractive, and while this isn't exactly a complete basic cookbook, the directions are fairly detailed and do not assume much expertise.The layout of the recipes, notes and directions is exceptionally attractive ... This book does not contain dairy free recipes. The female author simply uses regular recipes and when milk or butter is required, she simply writes "use non dairy milk substitute" or "use non dairy butter substitute". Well duh! I could have figured that out. She does not recommend any particular brands, she simply writes "read the label". Again, duh! I could have figured that out. So save your money find a good milk and butter non dairy substitute and READ THE LABELS. The recipes are bland and the author does not give a complete list of ingriedients to look out for/avoid when you are "reading the labels". This book was poorly written and is uninformative.

I bought this book hoping to find new ideas on dairy-free cooking.While the recipes are dairy free about 95% of them call for tofu.I've read a lot on nutrition and am also concerned about going over board on soy consumption, especially for women.This book would be great for a vegan but if you're just looking for dairy-free then I would recommend 'Totally Dairy-Free Cooking' by Louis Lanza.

This book is written from the point of view that after some people eliminate all meat from their diets, they might choose to eliminate dairy also.Since it is written from this strict vegetarian viewpoint, all ofthe recipes are fine for people who have dairy allergies as well. Many ofthe recipes include soy cheese products - if you are milk protein allergicyou can eat some of these products, but not all of them, so be sure to readthe ingredient lists carefully. Some soy cheeses are made with casein orsodium caseinate, which are milk derivatives. This book assumes that youalready know what you are allergic to, if anything, and that you know howto avoid it. Other than the soy cheeses, all other dairy possibilites areeliminated and milk substitutes such as soy, rice and almond milk are usedin their place. This book is full of wonderful recipes that make the mostof non-animal proteins such as tofu, seitan, and tempeh. Although I'm not avegetarian, I was excited to see so many great-sounding recipes thattempted me even though I've never eaten seitan and rarely liked tempeh. Itincludes delicious rich soup recipes and some noodle and pasta dishescontaining a white sauce made with almond or soy milk, something I wasn'tsure was possible until this book. It contains many spicy, creative dishesas well, something not always common to dairy-free or vegetarian cookbooks.

This was the first dairy-free cookbook I bought when I found out I was allergic to milk proteins. So far, every recipe (over 20) that I've made from this cookbook has been a poor comparison to its dairy equivalent.
